In 2005 Jacksonville Vineyards completed construction of Fiasco Winery. With its completion, our vines-to-wines Estate production capacity is in place, a significant step for us. Pamela and Dave are dedicated to grape growing and wine making in exactly the styles and high quality methods learned through years of study with vineyards and wineries locally, in Europe, and in Australia. With the Winery’s completion, and our third grape harvest of 2005, our first Estate wines are being produced.
We determined very early on in both our vineyards and our winery that we would use only the best materials and processes available in all of our practices – “from the vineyards to the labels”. All of our wines are aged in 100% French oak barrels, some briefly, like our Blush Syrah or White Zin, while others like our barrel fermented Chardonnay, our Claret and Cabernet Sauvignon, are aged for extended years in French oak.
We also want our facilities to blend in with the history and heritage of the William Matney Homestead. To that end, Fiasco Winery is constructed with the same “board and batten” exterior, but with 10 inches of insulated walls, efficient sub-systems, and appropriate design considerations. And our huge custom winery door is truly a one of a kind!
We welcome every visitor with a tour right through that custom door into the winery! With a capacity of 120 barrels, and production activities often in progress, we’re happy to discuss the processes of our state-of-the-art wine making facilities. As our vineyards continue to mature, so has our capacity of fine wine making, and we are happy to talk about those processes, materials, and philosophy.
The tasting room has been expanded, and is staffed always by Pamela or Dave, often with the assistance of other friendly and knowledgeable family members.
